Instructions
- With the stove set to medium, place your 2 sticks of butter into a pan.
- Melt your butter in the pan and then reduce the temperature to medium low. You will see the butter starting to foam at the top. You want to stir and scrape the sides often.
- When the butter starts to brown, you will need to keep an eye on it as once it begins to brown, it can brown very quickly.
- If you prefer a milder flavor, remove the pan from the heat when it’s a golden brown. The browner it gets, the more intense the flavor will be.
- When your desired darkness has been achieved, remove from the pan and let it cool for a few minutes.
- Pour the contents of the pan into a large measuring cup, preferably glass. Be sure it’s large enough to whip without spattering all over. Be sure to scrape all of the brown bits from the pan. This is where your flavor is!
- Put your measuring cup in the fridge to let it cool. A good start time would be 10 minutes. You want the butter to be completely cooled, but not hard. It should be thickening along the edges of the container.
- If adding flavors or sweeteners, this is when you will add them. See tips and tricks for some flavor options.
- Whip the butter until it is a good, creamy consistency, approximately 3 minutes. If it’s not whipping well, put it back in the fridge for another 5 minutes.
- Once all whipped, you can fill your molds and freeze. You can also just place the whipped butter into a small mason jar and spoon out as needed. You can use a measuring spoon or simply fill the molds. If you don’t have a mold, you could line your sheet with parchment paper and spoon out 1 tablespoon at a time and free form your bites.
